Little tea basics
All of the approximately 3,000 known tea varieties are produced from Camellia tea plants. Different crosses, different growing areas with their own climatic conditions and picking and processing result in the variety of tea flavors. The freshly plucked tea leaves are processed using different methods and techniques. This results in a total of six types of tea, which differ only in the way they are produced.
For optimal tea enjoyment, it is not only the quality of the tea leaves that is decisive, but also factors such as the dosage of tea, water temperature and quality and the brewing time. Each type of tea develops its best aroma at a different infusion temperature. If, for example, delicate white teas are poured over with bubbling hot water, the valuable but volatile flavors are lost.
Each tea requires its own water temperature and infusion time. Therefore, please follow the preparation recommendations of your tea retailer and experiment to find your personal best taste.

Water quality and infusion time
The tea master Zhang Dafu was already aware of the importance of water quality in tea preparation:
“The quality of a good cup of tea depends 20% on the tea itself and 80% on the water used”.
In principle, fresh, unchlorinated and oxygenated water that is not too hard should be used to make tea. However, tap water varies in hardness depending on the region. Water that is too hard clouds the tea with a film on the surface, which inhibits the development of the aroma.
Natural mineral water is only suitable for making tea to a limited extent. Natural mineral water often contains high levels of calcium and hydrocarbonate, which precipitate into white flakes when the water is boiled and raise the pH value. Natural mineral water should therefore only be used if the calcium and hydrocarbonate content is low.
As with the water temperature, each type of tea has its own infusion time, but personal taste is always the deciding factor. Try out how you like your tea best. Nevertheless, there are some basic principles that you can follow: The more tea leaves you use and the hotter the water, the shorter the brewing time. In terms of brewing time, black teas are generally not as sensitive as all other types of tea, where a few seconds are often sufficient.
Herbal and fruit teas
Herbal and fruit blends are not teas in the true sense of the word. This is because they are not made from the tea plant, but from parts of herbs and fruit. A high water temperature is extremely important for these infusions to swell and release the active medicinal ingredients.
